EASY BLUEBERRY CRUMBLE
Most of us know about the superior benefits of consuming blueberries for healthy weight loss, however, I had no idea of the potent ‘anti aging; properties, this tasty blue berry contained!
Some resent research demonstrated how blueberries contain a substance identified as Pterostilbene, which have shown to have significant ‘anti aging’ properties.
To get a little ‘geeky’ – The mechanism of action is though the modulation of the sirtuins pathway.
Anti-aging sirtuin molecules regulate DNA repair, and help to maintain telomere length – an important longevity factor. 1.
SO, I decided to write about it and include an easy- to-make, delicious blueberry crumble recipe to help keep you at your optimal weight, look and feel younger too!

EASY BLUEBERRY CRUMBLE
Yield: 6 servings
EASY BLUEBERRY CRUMBLE
INGREDIENTS
- 8 cups of blueberries
- juice of 1/2 lemon + grated rind of 1/4 the lemon
- 2 tbsps arrowroot flour/starch
- 1/2 tsp Celtic or Himalayan Salt
- 2 tbsps Coconut Sugar
- 2/3 almond meal + 1/3 cup ground flax seeds + 1/4 cup coconut flour
- 3 tbsps butter, softened
- 1/4 cup Coconut Sugar
- 1 tbsp vanilla extract
- 1/2 tsp Celtic or Himalayan Salt (added the second time)
DIRECTIONS
Place blueberries in a bowl and mash. Toss with lemon juice + rind, coconut sugar, and arrowroot
Place in a buttered baking dish.
In a separate bowl, combine almond meal + flax, coconut flour, butter, coconut sugar, vanilla extract and salt.
Crumble this mixture over top the blueberries.
Bake at 350 degrees for 1 hour (lid on).
Serve warm and topped with cream.
Simple. Easy. Nourishing.
