EASY BREAKFAST APPLE MUFFINS

The Christmas holidays are coming and it’s going to start getting very busy.

We know having a good breakfast is KEY to getting things done.

So, I thought I would share one of my favorite muffin recipes that you can just ‘grab and go‘. It’s perfect for this time of year when apples are plentiful too.

Rest assured, these muffins are a good part of a Fit n Healthy Diet.

With the right amount of easy to digest protein + high fiber carbohydrates + fat burning fats + what I call my ‘super food’ extras….these Easy Breakfast Apple Muffins are a perfect holiday season recipe to keep you at peak performance.

So you can get what you need to get done – DONE!

(Children and husbands love them too).

Serve with a spoonful of organic, grass fed butter, a side of extra eggs or yogurt + vanilla protein powder, and you’re good to go!

EASY BREAKFAST APPLE MUFFINS

Yield: about 18 muffins

EASY BREAKFAST APPLE MUFFINS
INGREDIENTS

  • 1 very ripe banana
  • 1 large organic apple, peels on, grated
  • 1/2 cup zucchini, grated
  • juice of 1/2 lemon + grated rind (optional but tasty)
  • 1/2 tsp baking soda
  • 1 rounded tsp of cinnamon or more for taste
  • 1/2 tsp Celtic or Himalayan Salt 
  • 4 whole organic, free range eggs
  • 1/4 cup melted coconut oil or butter
  • 1/3 cup coconut milk
  • 1 1/2 cups almond meal + 1/4 cup ground flax seeds + 1/2 cup arrowroot flour/starch

You can toss in some organic raisins or dark chocolate chips for extra fun:)


DIRECTIONS

Preheat oven to 350 degrees F

Using a fork, mash banana and place into a large mixing bowl.

Place all other ingredients and mix by hand.

Using a bit more coconut oil, grease muffin tins and drop batter until 3/4 filled.

Bake for 15-20 min until the toothpick comes out clean.

Simple. Easy. Nourishing.
