Healthy Halloween Hearty Soup (with dipping bread)

Keep your children healthy this Halloween with this Healthy Halloween Hearty Soup.

With Halloween just around the corner, keeping your children healthy is likely top on your list. 

My advise. Get a good healthy start to the night and fill their tummies before the trick or treat.

This Healthy Halloween Hearty Soup is my go-to to get-the nutrition in, when they need it most!

You’ll notice in this recipe the veggies skins are left ON. The skins are actually where most of the nutrition IS (plus it’s easier on the cook with less time to make)

When I learned this, it was a game changer for me in the kitchen. 

Healthy Halloween Hearty Soup

Yield: 6 – 8 servings

HEALTHY HALLOWEEN HEARTY SOUP
INGREDIENTS

1 previously baked medium sized pumpkin, skins on, cut into chunks

1 tbsp coconut oil
3 medium onions, partly peeled and chopped (skins on)
4 carrots, chopped (just rinsed keeping the skins on)
4 celery sticks, chopped
1 cup zucchini, chopped
3 parsnips, chopped, (just rinsed keeping the skins on)

4 cloves of garlic, crushed (skins off)

1 tsp each of: thyme, marjoram, sage, basil + smoked chili pepper 
Pinch of freshly ground pepper (black)
2 tsps Himalayan or Celtic salt
6 cups water or chicken stock (ideally homemade chicken stock for added immune support)
pinch of cayenne pepper

DIRECTIONS

To bake pumpkin. Preheat oven 350 degrees.

Wash using just water and scrub with a textured cloth. Place on cutting board, slice open with a strong and sturdy knife, scoop out the seeds. Using this same knife, cut into chunks, place into baking dish add about 1 tbsp of coconut oil and 1/2 tsp of Himalayan salt.  Using your hands, cover pumpkin pieces with oil and salt and bake, covered for about 40 min. 

In the meantime

Using a stockpot, heat 1 tbsp coconut oil over medium heat. Add onion, carrots, celery, zucchini and parsnips. Sauté, stirring often until tender (about 10 minutes). Add garlic, herbs, salt, pepper. Saute another 5 min, then add previously made pumpkin plus water or chicken stock.

Bring to a boil, reduce heat, simmer uncovered for about 5 min.

Place half of the Healthy Halloween Hearty Soup into a blender, puree and place back into the pot.

For a complete meal, add chunks of previously made protein of your choice: My favorite: Last night’s cooked chicken topped with a generous portion of organic Parmesan cheese.

Serve in deep dish bowls with a side of your favorite dipping bread and butter.
