INGREDIENTS
CHICKEN
- 6-pound whole chicken
- 3 teaspoons Celtic or Himalayan salt
- 2 tsp each of dried rosemary, sage, garlic powder, chipotle, smoked chili pepper, basil and oregano
- 1/4 tsp thyme
- 3 tsps coconut sugar (don’t miss this part!)
- 2-4 cups filtered water (enough to have the chicken sit in 1 inch of water)
INSTRUCTIONS

Preheat your oven to 350 degrees.

Rinse your chicken with cold water inside and out and dry well with paper towels.

Combine herbs and spices in a small bowl and mix well. With your hands, rub your spice mix on the outside of your chicken.

Lay your chicken breast side down in an oven-safe roasting pan. Place in your preheated oven cook for approximately 3.5 hrs.

Take the cover off 1 hr before it’s ready (at the 2.5 hr mark), using a ladle, pour the juices over the chicken and place back in the over for the remaining time (approximately 1 hr). Cover stays off.

Cook until it falls apart with a fork or until the temperature of the breast meat registers at 180 degrees.
- Let it sit for 15 minutes to allow for all the juices to set in and serve with your favorite roasted veggies!
