- 4 cups mixed greens try romaine, endives, butter, or any dark leafy green
- 1 small shallot, chopped
- 1/4 cup extra virgin olive oil
- 2 Tbsp apple cider vingegar shake up bottle first, then pour serving size
- 1 tsp coconut aminos alternatively, use fermented soy sauce
- 1 tsp Dijon mustard alternatvely, use regular French mustard and add in a pinch of horseradish (if have on hand)
- 1 tsp dried chili pepper I like the smoked chili peppers
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp Celtic or Himalayan salt
- 1/2 tsp black pepper
- 1 cup sheep feta, crumbled
- 1/4 cup walnuts ideally preciously soaked and dried
- 1/2 cup sliced strawberries
Ingredients

- Place greens and chopped shallots in a large glass bowl.
- To make dressing: place oil, vinegar, coconut aminos, mustard, herb ans spices into a glass jar. Cover with lid and shake.
- Pour dressing over greens and shallots.
- Top with feta, walnuts, and strawberries.
This recipe yields 10 grams of carbs and 18 grams of protein, and 27 grams of fat per serving. If you need more protein, grilled chicken combines well with this recipe. Squeeze in added lime for best flavor.
