What inspired me to create this bread was that I was super tired of coconut bread. It came out PERFECT the first time! I personally love the caramel flavor of the Kuri or Kobucha Squash. The butter, maple syrup, cinnamon mixture can’t be beat. Reminds me of the muffins my Mom use to make.
I often enjoy this as my after dinner ‘dessert’. I toast it up and dip in grass fed butter or flax seed oil and celtic salt.
Any squash will do, however, I like the flavor and texture of either the Kuri or Kobucha Squash.
Kuri Squash is a thin skinned orange colored winter squash, that has the appearance of a small pumpkin without the ridges.
Full-flavored and sweet, red kuri squash is often cooked with butter It is an ingredient in a variety of soups, stews and casseroles. It can be made into cakes, quick breads, muffins, cookies, jams and pies with its nutty-tasting flesh.
Red kuri squash is a good source of fiber. Low in calories and sodium.
Kabocha squash is similar to Kuri but more moist.
It is hard on the outside with knobbly-looking skin. It is shaped like a squat pumpkin and has a dull-finished, deep-green skin with some celadon-to-white stripes and intense yellow-orange color on the inside
It is remarkably sweet with a nice nutty flavor, and texture that’s similar to a blend of sweet potato and pumpkin. Rich in beta carotene, iron, vitamin C and potassium.
