The Ultimate Squash Bread (make into cupcakes)

Helps with weight loss too as it doesn’t contain grains which tend to put the weight on for those not very active.

What inspired me to create this bread was that I was super tired of coconut bread. It came out PERFECT the first time! I personally love the caramel flavor of the Kuri or Kobucha Squash. The butter, maple syrup, cinnamon mixture can’t be beat. Reminds me of the muffins my Mom use to make.

I often enjoy this as my after dinner ‘dessert’. I toast it up and dip in grass fed butter or flax seed oil and celtic salt. 

Any squash will do, however, I like the flavor and texture of either the Kuri or Kobucha Squash.

Kuri Squash is a thin-skinned orange colored winter squash, that has the appearance of a small pumpkin without the ridges. 

Full-flavored and sweet, red kuri squash is often cooked with butter  It is an ingredient in a variety of soups, stews and casseroles. It can be made into cakes, quick breads, muffins, cookies, jams and pies with its nutty-tasting flesh.

Red kuri squash is a good source of fiber. Low in calories and sodium.

 

 

Kabocha squash is similar to Kuri but moister.

It is hard on the outside with knobbly-looking skin. It is shaped like a squat pumpkin and has a dull-finished, deep-green skin with some celadon-to-white stripes an intense yellow-orange color on the inside

It is remarkably sweet with a nice nutty flavor, and texture that’s similar to a blend of sweet potato and pumpkin. Rich in beta carotene, iron, vitamin C, and potassium.

Instructions
  1. Preheat oven to 350 F.
  2. In your food processor, mix all the ingredients in order of appearance until smooth, using previously baked winter squash (see image)
  3. Grease an 11 X 8 X 2-inch glass rectangular pan with coconut oil.
  4. Spread batter evenly in glass pan.
  5. Bake for 45-55 minutes or until toothpick inserted in the centre comes out clean.
  6. Serve with butter, ghee or flaxseed oil and salt.
